Thai Noodles with Spicy Peanut Sauce | April 2021

Each month, the Food Shelf selects a Recipe of the Month, and provides shoppers with all the ingredients necessary to prepare the dish, along with a recipe card. Our April 2021 Recipe of the Month is Thai Noodles with Spicy Peanut Sauce and is available beginning Monday, April 12th, while supplies last.


Prep Time: 10 mins

Cook Time: 20 mins

Serves 4


Ingredients:

1 lb linguine pasta

5 Tbsp sesame oil

1 16 oz bag frozen stir fry veggies

1 Tbsp garlic powder

1 Tbsp ground ginger

1/3 cup honey

1/2 cup creamy peanut butter

1/2 cup soy sauce

1/4 cup rice vinegar

2 tsp chili-garlic sauce


Directions:

1. Cook pasta in a large pot according to package directions. Drain and return to pot. Add 2 Tbsp sesame oil and toss to coat. Set aside.


2. Heat 3 Tbsp sesame oil in pan over medium heat. Saute entire bag of stir fry vegetables until soften, about 4 minutes. Season with garlic powder and ground ginger. (packet included in your kit).


3. Add honey, peanut butter, soy sauce, rice vinegar, and chili-garlic sauce. Mix well. (container of these ingredients are included in your kit). 4. Simmer sauce 3 minutes, stirring continuously.


5. Remove the cooked pasta from the pot and transfer to a large platter. 6. Pour the sauce over the pasta and toss well.
